Jalapeno & Cherry Coke Glazed Meatballs

Here's another easy snack that would be awesome to serve at a Super Bowl party. These jalapeño and cherry coke glazed meatballs pack a bite-size punch of sweet and hot flavor that is just perfect. They're not over-the-top spicy, but you still might want to have some refreshing drinks, like this lemonade, nearby to cool off after eating a few.

Ingredients:
  • 1 pound ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 1/2 tsp salt
  • 1 1/2 tsp paprika
  • 1 tsp dried parsley
  • 1 tsp black pepper
  • 1 tsp brown sugar
  • 1/2 tsp ground nutmeg
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • pinch of cayenne pepper
  • 1/2 cup brown sugar
  • 1/2 cup cherry coke
  • 3 jalapeños, finely chopped
Instructions:

  • Preheat oven to 400
  • Mix together salt, paprika, dried parsley, pepper, nutmeg, onion powder, garlic powder cayenne pepper and 1 tsp of brown sugar.
  • Combine the spice mixture, egg and breadcrumbs into the ground beef until mixed thoroughly.
  • Use a medium sized ice cream scoop to form the meatballs. Place the meatballs on a baking sheet covered with parchment paper.
  • Bake for 20 minutes, turning over halfway through.
  • In a skillet, mix together the remaining 1/2 cup of brown sugar and the jalapeños.
  • Pour the cherry coke in with the sugar and jalapeños, and bring to a boil.
  • Let the glaze simmer over medium heat for about 8 minutes, or until it stops bubbling.
  • Brush the glaze over the meatballs completely, and bake for another 5 minutes.
