Breakfast Burritos

Mornings during the week are so busy that I usually end up just grabbing some yogurt or drinking a tall glass of milk before I go to work. On Saturday mornings though, TJ and I have made a tradition out of cooking a nice, big breakfast together. It's the perfect way to start our weekend, and it feels great to be able to just take our time cooking and eating together. These breakfast burritos are our new Saturday morning favorite. You should make them as soon as you can, no matter what day of the week it is!

Ingredients:
  • 1/2 bag (20oz) shredded hash browns with peppers and onions
  • 1/2 package hot breakfast sausage
  • 4 eggs
  • 1/2 cup shredded Mexican cheese
  • salt and pepper to taste
  • 2 whole wheat tortillas
Instructions:
  • Cook the hash browns according to package directions, until golden brown.
  • While the potatoes are cooking, brown the sausage, drain on a paper towel and set aside.
  • Whisk together the eggs and cheese until well combined. Add salt and pepper to taste.
  • Combine the hash browns, sausage and egg mixture in a pan and cook over low heat.
  • Stir occasionally, until the eggs are fully cooked.
  • Completely soak two paper towels in water and squeeze out the excess.
  • Wrap the tortillas in the wet paper towels, and microwave for 30 seconds to soften.
  • Spoon the burrito filling into the middle of a tortilla, and wrap tightly.
