10 Minute Frozen Mint Oreo Pie

Happy New Year! With the holiday season officially over, I'm beginning to gear up for my favorite day of the year: Super Bowl Sunday! It'll be here before I know it, so I'm already starting to plan what I'll be making for the big day. This 2 ingredient, 10 minute dessert is at the top of my "to make" list. The combination of mint Oreos and ice cream is amazing, and since this is such a breeze to make, you'll have plenty of time to sit back and enjoy the game (or commercials, if that's more your thing!)

Ingredients:
  • 1 package Cool Mint Oreos 
  • 1 tub vanilla bean ice cream
Instructions:

  • Place one row of mint oreos in a gallon-sized plastic bag.
  • Using a rolling pin, break the cookies until they are finely crushed.
  • Pour the cookie crumbs into the bottom of a pan, to form a "crust" for the pie.
  • Place the second row of oreos in the plastic bag, and crush with the rolling pin.
  • In a medium bowl, stir the crushed cookies into the ice cream.
  • Stir until thoroughly combined.
  • Pour the ice cream and cookie mixture into the pan, on top of the cookie "crust".
  • Place the last row of oreos into the plastic bag, and once again break until finely crushed.
  • Pour the cookie crumbs on top of the ice cream mixture, and spread evenly to cover.
  • Cover with foil, and keep in the freezer until ready to serve.
