Sloppy Joe Cups

TJ absolutely loves Sloppy Joes, so when I came across this recipe for a twist on them, I knew he would be all over them. These Sloppy Joe Cups are an extremely easy weeknight meal, that we look forward to having again soon!

Adapted from this recipe

Ingredients:
  • 1/2 lb. ground beef
  • 1/2 tsp onion powder
  • 1 can reduced fat refrigerated biscuit dough
  • 1 cup sloppy joe sauce
  • shredded cheddar cheese
Instructions:
  • Preheat oven to 350.
  • In a large skillet, brown beef and onion powder, and drain.
  • Add the sloppy joe sauce and simmer on low heat for about 5 minutes.
  • While the beef mixture is simmering, open the biscuit dough and press the individual biscuits into a greased muffin tin forming a "cup".
  • Using an ice cream scoop, place the beef mixture into the center of each biscuit cup and bake for about 15-20 minutes, or until the edges are golden brown.
  • Immediately top with cheese, and serve.
