Yogurt Cheese

We use cream cheese in a lot of our recipes, and while it is delicious, we decided to find a healthier alternative. Yogurt cheese has the same consistency, but it is fat free, and low in sodium and lactose. By allowing the liquid whey to drain from  fat free plain yogurt, you're left with a creamy and rich white cheese  that can be used as a healthier substitute. The best part about yogurt cheese is that it tastes rich, and when mixed with other foods, it takes on that flavor. We've used this in several different recipes, and we really can't tell the difference between it and cream cheese.

Ingredients:
  • 1 16oz tub of non-fat, plain yogurt
  • 2 coffee filters
Instructions:
  • Place 2 coffee filters in a strainer, and place the strainer into a bowl. 
  • Empty the container of yogurt into the coffee filters. 
  • Cover with plastic wrap and refrigerate overnight.
