Miko's Rice

Miko's Rice is one of those dishes that I will always remember from my childhood. My mom has been making this for as long as I can remember, and it was always a dish I would request when I was home visiting from college. None of us are sure where the name comes from, but it doesn't really matter, because in my house, this is comfort food at it's finest.

Adapted from my mom's kitchen!

Ingredients:
  • 1 chicken breast
  • 3 slices of bacon
  • 1 egg
  • 1/2 cup green onions
  • 1 cup shredded carrots
  • 1 bag microwaveable brown rice
  • soy sauce, to taste
Instructions:
  • Slice the chicken breast into small chunks and season with preferred spices. Slice the bacon into small pieces.
  • In a medium pan, cook the chicken and the bacon over high heat, until cooked through.
  • While the meat is cooking, cook the egg in a thin layer, as you would an omelette.
  • Chop the green onions.
  • When the egg is fully cooked, chop it into small pieces.
  • Cook the rice according to directions on the bag.
  • Combine rice, chicken, bacon, egg, green onions and carrots in a bowl, and add soy sauce to taste.
