Adapted from this recipe
Ingredients:
- 1 pound ground beef
- 1 large egg
- 1/2 cup breadcrumbs
- 1 1/2 tsp salt
- 1 1/2 tsp paprika
- 1 tsp dried parsley
- 1 tsp black pepper
- 1 tsp brown sugar
- 1/2 tsp ground nutmeg
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- pinch of cayenne pepper
- 1/2 cup brown sugar
- 1/2 cup cherry coke
- 3 jalapeños, finely chopped
Instructions:
- Preheat oven to 400
- Mix together salt, paprika, dried parsley, pepper, nutmeg, onion powder, garlic powder cayenne pepper and 1 tsp of brown sugar.
- Combine the spice mixture, egg and breadcrumbs into the ground beef until mixed thoroughly.
- Use a medium sized ice cream scoop to form the meatballs. Place the meatballs on a baking sheet covered with parchment paper.
- Bake for 20 minutes, turning over halfway through.
- In a skillet, mix together the remaining 1/2 cup of brown sugar and the jalapeños.
- Pour the cherry coke in with the sugar and jalapeños, and bring to a boil.
- Let the glaze simmer over medium heat for about 8 minutes, or until it stops bubbling.
- Brush the glaze over the meatballs completely, and bake for another 5 minutes.
