Adapted from this recipe
Ingredients:
- 1/2 bag (20oz) shredded hash browns with peppers and onions
- 1/2 package hot breakfast sausage
- 4 eggs
- 1/2 cup shredded Mexican cheese
- salt and pepper to taste
- 2 whole wheat tortillas
Instructions:
- Cook the hash browns according to package directions, until golden brown.
- While the potatoes are cooking, brown the sausage, drain on a paper towel and set aside.
- Whisk together the eggs and cheese until well combined. Add salt and pepper to taste.
- Combine the hash browns, sausage and egg mixture in a pan and cook over low heat.
- Stir occasionally, until the eggs are fully cooked.
- Completely soak two paper towels in water and squeeze out the excess.
- Wrap the tortillas in the wet paper towels, and microwave for 30 seconds to soften.
- Spoon the burrito filling into the middle of a tortilla, and wrap tightly.
