Garbage Plates

TJ and I usually try to go back to his hometown of Rochester, New York at least 2 or 3 times a year. It’s wonderful to spend time with his friends and family, and I love to see the different places he used to go while he was growing up. On my second trip up there, he introduced me to the meal that Rochester is known for: Garbage Plates. They’re basically a messy, strange combination of foods, all mixed together in a way that ends up being out-of-this-world delicious. Now we have a little tradition of stopping to get a Garbage Plate as soon as we arrive in the city. In fact, we’re planning a trip for Labor Day, and we've already talked about stopping to get one on our way from the airport to his mom’s house. I’ll admit that our version of these isn't quite as good as the original, but they’re as close as you can get without making a trip to Rochester yourself.

Ingredients:
  • 2 russet potatoes
  • 1/2 of hamburger meat
  • 4oz macaroni salad
  • Buffalo sauce, to taste


Instructions:

  • Wash two potatoes and place in a boiling pot of water.
  • Let the potatoes continue to boil until they are fork-tender.
  • Cut your potatoes into one-inch cubes, and place into a pan with just a little olive oil.
  • Season the potatoes to your liking. We used salt, pepper, paprika, ground mustard, chili powder, and green onions.
  • Cook the potatoes over medium heat until they start to turn slightly golden, and remove from heat.
  • Let your grill heat up to high heat.
  • While the grill is warming up, season the hamburger meat according to your liking, and form into a burger shape. (We made one with a hamburger and one with a brat)
  • Place the burger onto the grill, and let cook for about 10 minutes on each side, or until thoroughly cooked.
  • While the burger is cooking, place the potatoes on the vegetable tray, and cook until they are crispy and golden brown.
  • To make the garbage plate, place the potatoes on your plate and top with macaroni salad and the hamburger meat. Top with buffalo sauce, and mix together.
