Banana Boats

So far, we've been all about grilled entrees this week, but it’s time to mix things up a bit! I’ve seen these banana boats floating around on Pinterest for a while now, and I thought they’d be a perfect thing to feature during Grill Week. I have to say, at first I had a hard time wrapping my head around the idea of eating a warm banana, and I really wasn't sure how I’d feel about it. But then, we made them, and any doubts I had went right out the window. These bad boys are delicious! I couldn't believe how amazing the flavors went together, not to mention how easy they are to make! These would be a perfect “final course” at a cook out, especially since everyone can customize their own banana to their liking. A little disclaimer regarding the measurements of the toppings below: TJ and I were feeling super casual when we made these, and we just tossed on a handful of everything, so the measurements I've written are just approximations. Let’s be honest though, you really can’t mess these up, so just go with it!

Ingredients:
  • 3 bananas
  • 3 tablespoons peanut butter chips
  • 3 tablespoons mini-chocolate chips
  • 3 tablespoons mini-marshmallows
Instructions:

  • Preheat the grill to medium-high heat.
  • Cut the banana peel lengthwise about 1/2 inch deep, leaving 1/2 inch at both ends.
  • Open the peel wider to form a pocket, and fill each with about 1 tablespoon peanut butter chips, 1 tablespoon chocolate chips and 1 tablespoon marshmallows.
  • Shape a piece of foil around each banana, forming a boat.
  • Grill, covered, for 5-10 minutes or until the marshmallows begin to melt and turn golden brown.
