Parmesan Potato Thins

Since we're so excited about the start of the NFL season, here's a bonus post for the week! These delicious potatoes have been our go-to side dish for the past two weeks, and they'll be the perfect complement to buffalo wings on game day.

Adapted from this recipe

Ingredients:
  • 1 large potato, scrubbed
  • 3 Tbsp olive oil
  • 1 Tbsp Italian Seasoning
  • 1 tsp salt
  • 4 Tbsp Parmesan cheese
Instructions:
  • Preheat oven to 450 and line a baking sheet with parchment paper.
  • Slice potatoes into even slices. If you prefer crispy potatoes, slice them very thin. If you prefer soft potatoes, slice them a little thicker.
  • Toss potatoes with olive oil, Italian seasoning and salt in a big ziplock bag to coat. Be sure to get both sides of each potato slice for the maximum flavor.
  • Place potatoes in a single layer and bake for 15-20 minutes, until lightly brown.
  • Top with Parmesan cheese and bake for an additional 5 minutes.
