Buffalo Chicken Bites

We're only a couple weeks away from the official start of Fall, and that means it's time for cooler weather, celebrating holidays, and my favorite weekend past time: Football! TJ and I are die hard Pittsburgh Steelers fans, and we take game day pretty seriously.

Well, no football game is complete without good food, so to celebrate the start of the NFL season, here's an easy and delicious finger food recipe: Buffalo Chicken Bites!

Adapted from this recipe

Ingredients:
  • 2 cans shredded chicken
  • 1/2 cup hot sauce
  • 3 1/2 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 tsp onion powder
  • 1 cup all-purpose flour
  • 3 eggs, lightly beaten
  • 3 – 4 cups Panko bread crumbs
Instructions:
  • Preheat oven to 350 and line a baking sheet with parchment paper.
  • In a large bowl, mix the chicken, cream cheese and hot sauce until combined.
  • Stir in the cheddar cheese and onion powder.
  • In three separate bowls, set out the flour, eggs and breadcrumbs.
  • Using a small ice cream scoop, spoon out the chicken mixture into about 1 1/2 inch balls.
  • Dip each chicken ball first into the flour, then the egg and finally into the breadcrumbs.
  • Place on the prepared baking sheet and bake for 25-30 minutes, or until crispy.
