Taco Stuffed Shells

These are a Mexican twist on the classic Italian stuffed shells. They are easy to make and have a lot of flavor from the cheese, salsa and taco seasoning. You can use any kind of shredded cheese, but to give them even more of a kick, we like to use Habanero cheese.

Ingredients:
  • 1lb ground beef
  • 1 package taco seasoning
  • 4 oz cream cheese
  • 15 large pasta shells
  • 1 cup salsa
  • 1 cup shredded habanero cheese
  • 1 ½ cups lime tortilla chips (crushed)
  • 3 green onions (chopped)
  • 1 cup sour cream
Instructions:
  • Preheat oven to 350.
  • In a skillet, cook the ground beef with the taco seasoning, according to package directions.
  • While the beef is cooking, boil the pasta shells and drain when fully cooked.
  • When the ground beef is finished, add the cream cheese. Cover and simmer until the cheese is fully melted, blending well.
  • Pour half of the salsa into the bottom of a 9x13 baking dish.
  • Stuff each shell with the meat mixture, and place in the baking dish.
  • Cover the tops of the shells with the other half of the salsa.
  • Cover the dish with foil and bake for 30 minutes.
  • Uncover and sprinkle the shredded cheese and crushed chips on top, and cook for 15 more minutes.
  • Once the shells have finished cooking, top with sour cream and green onions to serve.
