Fruit Salsa with Cinnamon Chips

We love just about any kind of salsa, but this fruit version of salsa, served with cinnamon chips definitely tops our list of favorites. This is a great snack to serve for guests, or just to enjoy with your own family. You can definitely vary the types of fruit or preserves based on personal preference, but the below ingredients are the ones we typically stick with. On occasion, we also take the easy way out and just get cinnamon sugar pita chips if we don't feel like making them from scratch. Either way, you won't be sorry if you make this!

Ingredients:
  • 2 kiwis, peeled
  • 2 Honeycrisp apples
  • 6 ounces raspberries
  • 1 pound strawberries
  • 2 tablespoons white sugar
  • 1 tablespoon light brown sugar
  • 3 tablespoons strawberry preserves
  • 10 (10 inch) flour tortillas
  • butter flavored cooking spray
  • 2 tablespoons cinnamon sugar
Instructions:

  • Preheat oven to 350.
  • Finely chop the kiwis, apples, raspberries and strawberries.
  • In a large bowl, thoroughly mix the kiwis, apples, raspberries, strawberries, white sugar, brown sugar and strawberry preserves.
  • Cover and chill in the refrigerator for at least 15 minutes.
  • Coat one side of each tortilla with the cooking spray.
  • Using a pizza cutter, cut each tortilla into 8 wedges and arrange in a single layer on a large baking sheet.
  • Sprinkle the wedges with desired amount of cinnamon sugar.
  • Bake for 8 to 10 minutes, or until crispy.
  • Allow the chips to cool and serve with the chilled fruit salsa.
