Every month or so, TJ and I get together with another couple for "game night". It's a night full of games, laughter and delicious food. This time we decided to do several different types of finger foods, and this is one of the snacks that I made. While bite-sized, these have no shortage of flavor, and will be perfect to make for the upcoming football season.

Ingredients:
-1 can shredded chicken, drained
-1 can mild Rotel diced tomatoes, drained
-12 oz cream cheese, softened
-1 cup shredded cheddar cheese
-1 clove garlic, minced
-3 tsp cayenne pepper
-1 tsp cumin
-1/2 tsp paprika
-1/2 tsp garlic salt
-1/4 cup cilantro, chopped
-6 scallions, chopped
-5 large sun-dried tomato tortillas
Instructions:
-In a small bowl, combine the shredded chicken with the cayenne pepper, cumin and paprika. Set aside.
-In a medium bowl, combine cream cheese, drained tomatoes, cheddar cheese, garlic salt, garlic, cilantro and scallions.
-Mix together until well-incorporated. Add chicken and stir together.
-Lay out tortillas and divide mixture evenly in the center of each. Spread into a thin layer leaving the edges clean.
-Roll each tortilla tightly. Do not fold in the ends like you would with a burrito but instead leave them free.
-Use a sharp knife to cut into 1" thick slices and transfer to a serving platter.
-Cover with foil and refrigerate until ready to serve.
